Chicken Curry – Low FODMAP

Chicken is such a versatile meat. It‘s affordable, easy to cook and works well with so many cuisines. I especially love to cook with chicken drumsticks, because they are one of the cheaper cuts, are great for slow cooking and they have a built in handle, which the kids love! This recipe is Low FODMAP, which means that people with IBS and other gut issues may find this easier to digest. It’s gentler on the guts but still full of flavour!!!

 

Chicken Curry – Low FODMAP

Ingredients:

  • 750 gms chicken drumsticks or thighs
  • 1 ½ tbsp garlic infused olive oil
  • 3 tsp ginger grated
  • 15 curry leaves
  • 10 ¼ tsp low fodmap curry spice mix
  • 240 ml – 1 cup low fodmap chicken stock
  • 150 gms – ½ cup + 2 tbsp lactose-free yoghurt  (or coconut yoghurt)
  • 2 tbsp lactose-free cream (or coconut cream)
  • 2 medium potatoes cut into 5 cm – 2-inch cubes
  • Fresh coriander leaves

Instructions

  1. In a big pot, saute the ginger with the garlic-infused olive oil.
  2. Add the curry leaves and fry for 1 minute.
  3. Add the Low Fodmap Curry Spice Mix and fry it until fragrant.
  4. Add the chicken pieces and stir.
  5. Add the chicken broth, stir and cover. Let it cook for 5 to 10 minutes.
  6. Add the potatoes, cover, and let it cook for 30 or until cooked through.
  7. 10 minutes before it’s ready, add the yogurt and cream. Mix well and keep cooking.
  8. Add the fresh coriander leaves and serve.

 

Recipe Notes

If you are not following the low FODMAP diet, simply use regular oil (plus 1 clove of garlic), chicken stock, yogurt, and cream.
