One Pot Macaroni & Cheese with Beef – Low Fodmap & Gluten Free

Mac & Cheese is a favourite among sooo many kids (of all ages) and this recipe is fabulous as we are adding in some hidden vegetables and some beef mince too!  This is a great dish as it is all made in one pot, so there is less clean up at the end of the night!  You can do this in your slow cooker, on the stove or in the oven…. Lots of possibilities for this super tasty & simple dish, that I’m sure will become a family favourite!

 

One Pot Mac & Cheese with Beef

 

Ingredients

  • 1kg beef mince (you could also use pork or lamb mince)
  • 1 tablespoon garlic infused olive oil
  • 1 cup chopped red capsicum
  • 1 cup chopped peeled carrots
  • 2 tbsp fresh basil or 1 tsp dried basil (plus additional for garnish)
  • 2 teaspoons dried oregano
  • 1 & 1/2 cans crushed or diced tomatoes in juice, no added onion or garlic
  • 1/2 cup water
  • 1 cup Beef or Chicken Stock/Broth
  • 1 tablespoon Worcestershire sauce
  • 2 teaspoons Taco Seasoning (low fodmap I use this to make my own)
  • salt and freshly ground pepper to taste
  • 350g dried elbow macaroni; gluten-free*
  • 2 cups grated cheddar &/or mozzarella cheese

Instructions

  1. Heat a very large frypan or Dutch Oven over medium high heat the infused oil and brown the beef, stirring until no pink remains, about 5 minutes (if using a slow cooker just add the beef mince & oil to the bottom of the pot and turn the heat on)
  2. Add the red pepper and carrots and sauté until almost tender, about 5 minutes
  3. Add the basil, oregano, tomatoes with their juice, water, beef base, Worcestershire sauce, and taco seasoning
  4. Season with salt and pepper, turn the heat to high, and bring to a simmer (if using a slow cooker, cook all the ingredients for 2-4hrs and then continue)
  5. Add the gluten-free macaroni, stir and cover
  6. Lower the heat to medium and simmer covered, stirring occasionally, until the pasta is tender but still firm (al-dente), and most of the liquid is absorbed, about 8 to 10 minutes
  7. Taste and season again with more salt and pepper to taste
  8. Sprinkle the cheese over the mixture, then cover until the cheese is melted
  9. Serve immediately
