Smokey Coffee Rub
Nothing beats a good steak. It really is one of my favourite things to eat. I usually opt for minimal seasoning on steak, just some salt and pepper and if I’m feeling really extravagant, some butter. Usually, with a good cut of grass fed meat, that’s all you need. With that said, sometimes you feel like kicking it up a notch. Why not try some coffee rubbed steak?
Coffee and steak always sounded like a good combination to me (who doesn’t love both?) but I never tried making a coffee rub before. I love mixing up new seasoning combinations and experimenting with spices, so this one was fun to come up with. I wasn’t sure how strong the coffee flavour would come through and was a little afraid that my first try would come off the grill tasting too much like gritty coffee grounds. Luckily, it didn’t.
This coffee rubbed steak is very simple to make and only has 8 ingredients. It has just a subtle taste of coffee that isn’t overpowering at all. The coffee flavour blends perfectly with the bold, smoky chipotle and other seasonings. It’s got a touch of sweet, a touch of spice, and the perfect dose of coffee flavour.
We used skirt steak, but this rub would work on any cut of steak or even brisket to take to the next level. Just prepare the spice rub, let it sit on your steak for 30 minutes to set in, and throw it on the grill. It’s really that easy to prepare a delicious steak with new depths of flavour.
- grass-fed skirt, flank or flat iron steak
- 2 tablespoons finely ground coffee (as finely ground as possible)
- 1 teaspoon salt
- 1 teaspoon smoked paprika
- 1 teaspoon mustard powder
- 1 teaspoon garlic powder
- 1/2 teaspoon ground black pepper
- 1/4 teaspoon ground chipotle pepper
- Combine all seasoning ingredients in a bowl and mix together.
- Generously sprinkle the steak all over on both sides with the coffee spice rub and gently massage it in. Let steak stand at room temperature for 30 minutes.
- Meanwhile, prepare a grill for direct cooking over high heat.
- Cook steak directly over the flame, flipping halfway through cooking, until well browned.
- This is about 3 minutes per side to cook a thin skirt steak medium-rare. Adjust cooking time accordingly depending on the thickness of your steak and desired doneness.
- Transfer steak to a carving board and let rest for at least 5 minutes. Slice the steak across the grain and serve.
