TEXAN BBQ SPICE MIX

We have tummy issues in our house, that’s no secret, so we follow a Low FODMAP Diet most of the time, which means we quite often have to make spice mixes etc from scratch.  This BBQ SPICE MIX is a favourite in our house… so much so that I make a triple batch and store it in a jar in the pantry so that it’s easy to grab on a busy night and I can throw it over pretty much any meat to give it a burst of flavour!  So… grab a clean, empty jar and make up some BBQ spice mix, stick a ribbon around it and this is a brilliant Father’s Day Gift for dad this weekend!

 

Texan BBQ Spice Mix

  • 2 teaspoons ground cumin

  • 2 teaspoons ground smoked paprika

  • 1 teaspoon ground oregano

  • 1 teaspoon salt

  • ½ teaspoon ground cayenne pepper

  • 2 tablespoons dry chilli flakes if you like it spicy!

Simply add them all to a clean, dry jar or airtight container, shake to mix all the spices and enjoy!

Texan BBQ Pork Fillets

Ingredients

  • 2 x 250g Pork Fillets
  • 2 Tbsp Olive oil
  • ½ cup Texas BBQ seasoning (SEE ABOVE)
  • 4 Cobs of corn, sliced & blanched

To Serve

  • Potato salad
  • Toasted flat bread
  • Green salad

What to do

    1. Brush the pork fillets with a little oil.
    2. Sprinkle the Texas BBQ seasoning onto a sheet of baking paper.
    3. Roll in the pork fillets in the seasoning and press the seasoning firmly onto fillets.
    4. Heat the griddle plate and BBQ over a medium heat and cook pork fillets 4-5 minutes on each side (3 sides).
    5. Brush the corncobs with a little oil and grill the corn pieces on the hot grill turning frequently.
    6. Serve pork fillets sliced thickly with grilled corn, potato salad, toasted flat bread and green salad.
